Spiced Ginger Muffins with Dates and Roots Wellness

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/4 cup brown sugar, packed
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp allspice
  • 1/4 tsp nutmeg
  • 1 tsp salt
  • 3/4 cup date syrup by Dates & Roots
  • 1/2 cup unsalted butter, melted and cooled to room temperature
  • 1/2 cup sourdough starter by Dates & Roots, room temperature
  • 2 tsp vanilla extract
  • 1/3 cup goat milk kefir by Dates & Roots (instead of milk)
  • 2 eggs, room temperature
  • 1 tsp shredded coconut
  • 1 tbsp. finely chopped walnuts
  • 1 tsp hemp powder

Mix all the dry ingredients together, then add the mixed liquid ingredients and mix thoroughly.

Do not over-mix. The batter should be thick, and it’s okay if there are clumps.
Pour the batter into the lined muffin tins.
Bake for about 30 minutes total in a preheated oven to 180° C .
Rotate the pan halfway through.

Let it cool completely before decorating and serving!
