Spiced Ginger Muffins with Dates and Roots Wellness

Ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1/4 cup brown sugar, packed
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground ginger
- 1/2 tsp cinnamon
- 1/4 tsp allspice
- 1/4 tsp nutmeg
- 1 tsp salt
- 3/4 cup date syrup by Dates & Roots
- 1/2 cup unsalted butter, melted and cooled to room temperature
- 1/2 cup sourdough starter by Dates & Roots, room temperature
- 2 tsp vanilla extract
- 1/3 cup goat milk kefir by Dates & Roots (instead of milk)
- 2 eggs, room temperature
- 1 tsp shredded coconut
- 1 tbsp. finely chopped walnuts
- 1 tsp hemp powder

Mix all the dry ingredients together, then add the mixed liquid ingredients and mix thoroughly.
Do not over-mix. The batter should be thick, and it’s okay if there are clumps.
Pour the batter into the lined muffin tins.
Bake for about 30 minutes total in a preheated oven to 180° C .

Rotate the pan halfway through.
