The Best Sourdough Toast with Seeds: A Guide for Bread Lovers

Toast SD with seeds: makes 2 big sandwish loaves.

Using a stand mixer.


(You will need 1 cup of seeds for each loaf).


Start with water if you’re mixing in a stand mixer.


• 500g All-purpose flour type 45 or 65 (Naturalia)
• 500g Spelt flour (Naturalia)
• 750g Water
• 225g Levain
• 20g Salt

1- Autolyze: flour + water
Rest 30 to 40 mins
2- Add your Levain (mix 5 mins).
Rest 2h 30 mins
3- Add salt and add seeds (mix 15 mins) > sticky texture.


Cut your dough into 2 equal portions.
For 3 hours: stretch & fold technique each 30 min 1 time.
Cake Moulds: brush with butter and flour the trays. Add ur 2 loaves.
Rest 2h 30min cover and close well to ferment on shelf.
* pre-heat your oven for 20 mins on 250°C
* score both loaves
  Brush EVOO (extra virgin olive oil) on top of the loaves.

Oven baking time:
Put a water steam in a tray (remove it after 15 min)
First 10 min 250°C
Continue 45 min 180°C
